Claude Morey arrived in Chassagne in 1643, originally from Paris he plied various trades including winemaker, cooper, barrel maker. Over the decades, generations succeed one another and acquired further vines and arable land. It was not until the 19th century that the profession of winegrower became the only activity. Today Thomas Morey, representing the tenth generation, operates 13 hectares of vines spread over seven villages.

The Chassagne-Montrachet Village comes from the Les Houillères plot, with small portions of En Journoblot and declassified 1er Crus. There are nine plots in total. Les Houillères was planted in 1989 with a mass selection. This plot ripens very early and is therefore almost always the first to be harvested. The soils are shallow and deep, consisting of a red clay-limestone mixture: it is found on the ridge of the famous Les Enceignères site. Fermentation takes place with indigenous yeasts in a combination of neutral barrels and tanks. Malolactic fermentation takes place naturally, and the wine remains on its lees without any bâtonnage. The proportion of new wood is around 20%.
