“The 2022 Chardonnay Pyros Appellation comes from the Pedernal Valley in San Juan; 20% of the grapes were fermented with native yeasts in barrels and underwent malolactic fermentation, while the remaining 80% was fermented in stainless steel tanks with selected yeasts. Yellow with a golden sheen. The nose shows enticing thyme and ginger notes with herbal and resinous hints from the oak. The palate has a generous, creamy texture, balancing the tart, refreshing flow and the pleasantly buttery feel before the chalky, long-lasting finish.”

Back in 2008, visionary entrepreneur Mijndert Pon – founder of Bodegas Salentein and Bodegas Callia – saw the potential in Argentina’s breathtaking Pedernal Valley. So he set up Pyros, the region’s first winery, specialising in high-altitude Malbec and now Chardonnay. Winemaking is far from easy here, but obviously Pon savours the challenge.
Chances are that you haven’t heard of the Pedernal Valley, but Pyros is putting it on the map. The extreme high-altitudes – we’re talking 1,400m above sea level – coupled with a desert-like climate and distinct calcareous soils create a totally unique terroir.
A good accompaniment to salads, starters with fish, white meat, poultry or veal. Also delicious with creamy cheeses.
