Domaine Huet, founded in 1928 by Victor Huet and his son Gaston, now boasts thirty hectares of Chenin planted across three plots: Haut-Lieu, Mont, and Clos du Bourg. The estate was one of the pioneers of biodynamic cultivation in French vineyards. This cultivation method, which respects the soil, the plant, and the environment, allows us to develop the character of our wines and preserve the authenticity of the terroirs.

A biodynamically certified estate, the work in the vineyard is guided by the different rhythms of the planets, in the more or less conscious manner of the winegrowers of past centuries.

The Vouvray grape variety is composed of a single variety, Chenin, more poetically called “Plan du Clair de Lune”. While it is often produced in Vouvray as sparkling wines, it is a grape variety that wonderfully reflects the terroirs and vintages in still wines. Known for their natural acidity and captivating aromatic palette, Chenin wines evolve slowly, acquiring finesse and subtlety.

This dry pétillant demands a fastidious approach to its production. At between 2.5 and 3.00kg of pressure, it requires a higher quality of base wine and great skill in its manufacture, notably when it is degorged. Pétillant is certainly vinous and should be probably thought of more as a wine with spritz than something celebratory.
