“Maybe it’s got something to do with her German nationality, but Jessica Saurwein has a very sure touch with Riesling. Chi comes from two sources in Elgin – Casey’s Ridge and Paul Cluver – and is wonderfully pure, pithy and transparent. Just off dry, with 11.5 grams of residual sugar, it has lemon and lime intensity and some sweetness to round out the acidity.”
