Product Description
We like to explain our territory and our landscape in two languages, in two ways. Old wines are the result of a search for a journey into the past, to old varieties such as Mandó, Arcos or Verdil and to ancient production methods such as ageing in clay jars. Old wines help us to explain the sunset and the sunrise, the subtlety of a cooler Mediterranean, the magic of our moons and the mystery of ancestral varieties.
Safrà was born in 2015 in an attempt to better define our plots and our old wines. Safrà is Mandó. But a different Mandó to the Mandó of Parotet. More fluid and above all more lively, with more electrifying sensations, with more of a white soul. After giving many turns to the cultivation and the elaboration while the vineyard was acquiring a little more wisdom (about twenty years old) we have finally found a wine profile that we were looking for, that we like a lot and that gives meaning to our great commitment to this unjustly forgotten and despised variety. We have learned that Mandó is a variety that allows a slightly advanced harvest that intensifies the characters that we seek, with a part of whole bunches, prolonged macerations but at low temperatures and very very soft. The clay jars of our fonda winery are the happy ending of this story. These Mandó wines are aged wonderfully well in these clay jars. The image is also another dragonfly but this time dyed in that color between yellow and orange that some good things have to eat or to enhance meals as is the case of saffron.
