Domaine de L’Enclos is one of the most exciting domaines to emerge from Chablis in the past decade. The estate is owned by siblings Romain and Damien Bouchard, whose family have been working in Chablis for generations. In 2015, they sold their father’s négociant business but retained the 39 hectares of vineyard previously owned by their mother’s family. In addition, they bought a house in the heart of the town called ‘L’Enclos’, which was originally a building used by the monks of Pontigny to house their vineyard workers.

Chablis 1er Cru ‘Vau de Vey’ is located on the left bank of the Serein to the west of Chablis. The grapes for the Domaine de l’Enclos 1er Cru ‘Vau de Vey’ are sourced from a 2.7-hectare parcel planted in 1979. The slope is steep and faces east/southeast – it is a cooler site as it receives the sun in the morning and is shaded by the forest at the top of the slope in the afternoon. Soils are classic Kimmeridgian limestone, packed full of fossils and imparting a marked minerality on the wine.
