The Colore comes from Bibi Graetz’s three best vineyard sites: Lamole, Vincigliata and Siena. Lamole offers vines over 80 years old in terraced vineyards at an altitude of 620 meters, producing small, concentrated grapes. Siena is at 350 meters above sea level with fertile, pebble-rich soil, and Vincigliata is at 300 meters with clay-rich Galestro soils. In Vincigliata, the grapes are harvested up to eight times and only perfect grapes are processed. Fermentation takes place in open barriques with wild yeasts, followed by three years of ageing in new barriques. This meticulous process guarantees the outstanding quality and unique character of the Colore.
