“The white 2023 Cullerot was produced with five local varieties—50% Macabeo, 15% Verdil, 15% Malvasía, 10% Pedro Ximenez and 10% other varieties—from seven growers and a total of 15 hectares. It fermented in stainless steel with indigenous yeasts and matured in 2,600-liter tinaja for six months. It has 12.64% alcohol, a pH of 3.44 and 6.17 grams of acidity. It has a pale yellow color and a Mediterranean profile that is floral and aromatic, with notes of dry hay, fennel and yellow flowers. It has an elegant and balanced palate that is very clean and precise, easy but serious, complex and long beyond its price point.”

We like to explain our territory and our landscape in two languages, in two ways. Old wines are the result of a search, of a journey into the past, to old varieties such as Mandó, Arcos or Verdil and to ancient production methods such as ageing in clay jars. Old wines help us to explain the sunset and the sunrise, the subtlety of a cooler Mediterranean, the magic of our moons and the mystery of ancestral varieties.

Our initial project did not contemplate the production of white wines. In 2006 we acquired the new estate in Les Alcusses and shortly after we started our project to study and recover the use of the old vats from the winery and that is when Cullerot was born. Cullerot means tadpole. A small white wine that wanted to grow and improve in a red wine area. And so it was. The vats soon showed us their benefits with white wines. Purity and freshness, a lot of freshness. Just what we needed. We have been travelling around the region in search of old vineyards and we have had much more luck with the white grapes than with the reds (the little that has been saved from the grubbing-up campaigns is very much committed to the cooperatives). At this time we have agreements with 7 producers that represent 15 hectares of 5 different native varieties. Sometimes we agree on a price per kilo but we prefer to pay per hectare so that the winegrower does not have to worry about the production and to better control the crop. After these years we are happy with the quality and market success of this wine and also because, by paying the winegrowers well, we have managed to preserve these old and beautiful vineyards.
